I have a gaming rig. It does nothing but connect me to servers with as much speed as I can drag out of it.
In other words this thing is optimized for online gaming.
Here's the problem:

And this is just a quick five minute snap shot. You should see what it looks like after a couple of hours
No NIC is going to fix those ping spikes (green lines) in hops 3 through 8.
I'm getting a 10%+ packet loss because of this at times. And the spikes are giving me freezes and warps that could drive you to drink
What I need to know, then, is there way around crappy servers like this? Is there software or hardware that can force a reroute?
Is there anything that can be done besides giving up and using my modem as a door stop?

First off, you are right, no network card can solve those issues for sure.
However, a Gaming Network Card like Killer http://www.killernic.com can do 2 things for you.
1.) Give you a smooth graphical experience regardless of how bad it gets online (.e.g Killer seperates graphics from networking).
2.) Make your system recover from packet loss faster. (detection of packet loss is done inside Killer)
To 'fix' the above, moving to a new ISP, or possibly a service like gamerail is definately worth a try. NOTE, you may fix the problem, but it can never be completely fixed forever... e.g. it is still a good idea to seperate graphics from Networking with a Killer.
